What is sherbet, really? It’s not ice cream. It has a far different flavor that differs from ice cream in every way I can think of. As well as that, its texture is slightly different. It freezes differently, and therefore it must be made out of a different substance. It lacks the creamy goodness that we know and love in ice cream, and it has those weird little flecks of…whatever they are. And yet we find sherbet in the same containers and the same section of the grocery store as we find our beloved ice cream. Is that just? Should sherbet be classified as its own thing? What makes ice cream ice cream?
